Peach Crisp Cake
Filling
2 tsp. flour
2 med. peaches, diced
1/2 tsp. lemon juice, optional
2 tsp. sugar
Cake
1/2 C flour
1 egg
1/4 C sugar
1/8 C coffee creamer, your flavor choice, mine: Caramel
1/8 tsp. vanilla
Topping
1/4 C brown sugar
1/4 C flour
1/2 C oats
2 tsp butter
some cinnamon
Preheat oven to 350. In a bowl mix all of the ingredients for the filling, gently toss to combine. Place into 2 baking vessels. Or one, if you don't want to share. But please do share, it's so much more fun. I shared mine with The boy at 10:00 last night. Shhh!
In another bowl combine all of the ingredients for the cake layer. After mixing, pour over fruit mixture in baking bowl.
In a seperate bowl, stir together all the ingredients for the topping with a fork. When that doesn't go so well, use you fingers to mix instead. Just sayin'. Sprinkle over other two layers. Bake in preheated oven for 20 minutes while you soak your tired body in a hot bath with Vaseline Intensive Care Moisturizing Bath Beads, oh wait that's what I did. You can too if you like, it was pretty nice , smelled good too.

So funny, I was looking at the Vaseline beads wondering how they factored into the cake before I read about the bath :) Looks yummy!
